New Workstation ... Your thoughts on config please

I am finally upgrading my home workstation to a 64bit system! I've narrowed it down to a performance HP model. I know that building it myself would be more cost effective, but I don't really have the time or desire to do it myself.

I will primarily be running zBrush, Maya and Photoshop, but I'd also like decent gaming performance.

I'm wondering if you all have any recommendations on the configuration. There are a few specific areas where I'd like input:

-Which version of Windows 7? Home or Pro?
-Graphics card. I'd like to run a dual monitor setup at some point. Will I need 2 DVI outs for this?
-Will upgrades at Processor and RAM be worth the extra $$?
-I'm also ready to get a new monitor and ditch my trusty CRT. Are the included monitor options a good value (and OK for graphics work) or would buying it separately be the better option?
