Transfer work symmetrically across a mesh

Hi guys,
I am working with a face mesh and need to add in some eyes. Is there a way to just do one side and mirror the result as a copy to the other side so that the mesh remains perfectly symmetrical? I tried to delete the side I don't need anymore, mirror the good side, and weld it to the good side but that messed up my UVW map (which then only had one side on it).
