If the shields are only a single poly thickness then you will not see the back as polygons are only visible from one side. you will have to add additional faces to see them on that side. 3ds max has a backface cull option that you can turn off to see the reverse side in the viewport, not sure mudbox has that.

how do I activate the back face cull? maybe doing exportation it will save and show in Mudbox as well.

its a max setting not exportable. if its only single poly thickness you dont need to see the back as it will only get the same texture as the front. you wont have a different texture for the back of the same poly. (unless you have the capability of double sided shaders in you final application.

The thing is that now that I'm going to add color, should I be able to Paint both sides of it? and at the time that I want to present in render mode the design how I be able to do a back photo of the cannon?

Look for the 'show both sides' command in the hotkeys window and assign a hotkey to it then.
how I be able to do a back photo of the cannon?
Well that needs to be thought of at the modelling stage. If you want the same texture to be seem from the back you make the material 2-sided, if you want a separate texture for the back then you need to give it faces for the back too (thickness)

I actually give it thickness to go faster in the work (-0.128cm) and still not showing at all :S...

can you share the obj file? if so upload the model to divshare.com and post the download link here and I'll have a look at it for you.

I actually accomplished to show it up. when you click in the grid there is an option of "Show two sides", and appeared the back part. but you were right, since it doesn't have enough geometry, it will only show up the true face of it, and the other one will not be showing since it has no geometry at all...
here it is:
