Eh? Those options are there surely? Scroll down on your menu at the side? Or have i completely misread what you are talking about?

you can't change the menu back to that style i don't think
very slim chance there's a script that'll maybe make it look that way again- but i doubt it as most think it's an improvement

I also moved from 9 to 2012 (and from 32 to 64 bits) about 2 months ago.

You can consider the new 'dialogs' for tools like chamfer, extrude, inset, etc, as being like the old ones but transparent. Only the meaningful parts - i.e. the settings - are displayed. Personally I consider the change as an improvement, as seing more of the model is always better.
You can still drag them out of the way if you want, just like the old dialogs.

The one thing that annoys me most with this version is the viewport navigation being a lot less smooth when using the MMB. In max 9, I used to keep the MMB pressed and just play with the CTRL and ALT key to zoom/pan/orbit fluidly. Now I have to release and repress the MMB between each mode.
Oh, and you can't clone sub-objects in place anymore, since shift-click is now used for loop selection.
