Changing small parts of textures

If I've made a sphere and place a bitmap texture on it.

How would I place another image/animation on a part of it if another mesh hit it?

sounds like a script to me

model/texture your model as usual
create a small plane object and apply the color/texture you wish to show when you hit another object.

write a script controller script to create or instance that plane object at the point of intersection only way i can think to do it. though detecting the collision location could be pretty tricky.
